HERB CHICKEN WITH CHEAT'S LEMON CAESAR

Lemon herb chicken makes a healthy and satisfying lunch especially during summer time when heat reaches the average. In fact, we tend to associate summer time with lemon and oranges as they are the best fruits that can boost our energy for long and heating days. So, lemon chicken will give as a hint of freshness as summer lunch. This recipe is an alternative between chicken ceasar and garlic herb chicken. For sure there is no huge difference between those two types of chicken recipes but the title! However, for our herb and lemon salad chicken cesar we are going to make a lunch for 4 persons and it will take us about one hour and a half to realize this delicious Herb Chicken with Cheat's Lemon Caesar. So, make yourself comfortable and ready to follow this adventure between lime salad freshness and chicken Caesar tastiness.
INGREDIENTS
For our today’s chicken recipe we are going to cook 4 fillets of chicken breast fully skinned. It is better to choose boneless chicken fillets for this lemon herb chicken. Then, as we are talking about lemon chicken, we will also need 2 lemons with which we are going to extract the juice and the zest. Keep some more lemons to be wedged for the serving. Else, as for garlic herb chicken, we are going to use:  4 well crushed garlic cloves, 2 tablespoons of chopped rosemary leaves, 3 tablespoons of olive oil and 2 lettuces. You can take off the outer leaves of the lettuce if they are too old. Then, to make the chicken ceaser perfect we are also going to add 3 torn thick slices of country bread, 4 slices of pancetta, 1 cup of grated parmesan which is going to be divided in two: for cooking and for serving, and lastly we have 100 g of mayonnaise. It is better to have a home made mayonnaise if possible. Some cookers more than 2 sort of cheese to make a chicken cesar; you can do the same for this Herb Chicken with Cheat's Lemon Caesar but let me warn you that it is going to be fatter than what we are expecting as a summer lunch!
DIRECTION
We are going to start with marinating the chicken with the following mixture: 2 tablespoons of olive oil, juice of a lemon, rosemary chopped leaves and lemon zest. Use a large bowl to marinate the chicken pieces. Cover your bowl and let the chicken pieces be marinated for 15 minutes. Meanwhile preheat your oven to 180°. Then, take the slices of country bread and let them impregnate the remaining olive oil before putting them on a large baking tray with the pancetta; bake the bread for 8 minutes. You are going to have golden slices of bread and crispy pancetta. After that, take a pan which is ovenproof and fry the marinated pieces of chicken for 3 minutes each side and then transfer the pan to oven to continue the cooking for 5 more minutes. Now that the chicken and the breads are cooked we are going to prepare the dressing. So, mix the mayonnaise and the parmesan with remaining of garlic and lemon juice in a bowl. Take 4 bowls and dispose your lettuce leaves, your chicken fillet, the mixture of mayonnaise and parmesan, the cooked bread and sprinkle with the extra parmesan. Do not forget your lemon wedges. Enjoy!
